  • 2 lbs beef chuck roast, cut into 1-inch pieces
  • 4 cups low-sodium beef broth
  • 3 large carrots, sliced
  • 2 medium Yukon Gold potatoes, cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop carrots, dice onions, and cube potatoes.
  2. Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper; brown on all sides (about 4 minutes per side). Remove beef from the pot.
  3. In the same pot, sauté onions and garlic until translucent (about 3 minutes).
  4. Return the beef to the pot along with carrots, potatoes, beef broth, thyme, and bay leaves.
  5. Bring to a boil; reduce heat to low. Cover and simmer for about 2 hours or until beef is fork-tender.
  6. Discard bay leaves before serving. Enjoy with crusty bread or on its own!
