  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil

Instructions

  3. In another bowl, combine pumpkin puree, eggs, and vegetable oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined; do not overmix.
  5. Transfer the batter to the prepared loaf pan and smooth the top. Bake for 60-70 minutes or until a toothpick comes out clean.
  6. Allow to cool in the pan for about ten minutes before transferring to a wire rack. Slice once slightly cooled.
