  • 4 medium bell peppers (orange, yellow, or red)
  • 1 lb lean ground beef
  • 2 cups cooked rice
  • 1 can (15 oz) diced tomatoes, drained
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Optionally carve faces into them.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground beef and cook until browned; drain excess fat.
  4. Stir in cooked rice, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Simmer for 5 minutes.
  5. Stuff each pepper generously with the filling and place upright in a baking dish.
  6. Cover with foil and bake for 25 minutes. Remove foil, add cheese on top, and bake uncovered for an additional 5 minutes until bubbly.
