  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 bell pepper (any color), chopped
  • 2 cups low-sodium beef broth

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Sauté the diced onions and minced garlic until translucent (about 5 minutes).
  2. Add the ground beef, breaking it apart as it cooks until browned (6-8 minutes).
  3. Stir in chili powder, cumin, salt, and pepper; toast for about 2 minutes.
  4. Add the kidney beans, black beans, diced tomatoes (with juices), chopped bell pepper, and beef broth. Mix well.
