- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 tablespoons Cajun seasoning
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- Cut the chicken breasts into bite-sized pieces and season generously with Cajun seasoning.
- Cook the pasta in boiling salted water according to package instructions until al dente; drain and set aside, reserving some pasta water.
- In a large skillet over medium-high heat, heat olive oil and sauté the seasoned chicken until golden brown (6-8 minutes). Remove from skillet.
- In the same skillet, add more olive oil if needed. Sauté onions, bell peppers, and garlic until softened (3-5 minutes).
- Stir in heavy cream and chicken broth; simmer for about 5 minutes.
- Add cooked chicken and pasta to the skillet; toss everything together until well-coated in the sauce.
- If the sauce is too thick, add reserved pasta water to reach desired consistency.
