  • 1 medium onion, diced

  • 28 oz can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 2 cups broken lasagna noodles (or pasta of choice)
  • 2 tsp Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Sauté diced onions and minced garlic until translucent (about 3 minutes).
  2. Add ground beef and cook until browned, breaking it apart with a spatula (about 5 minutes). Drain excess fat if needed.
  3. Stir in crushed tomatoes and chicken broth; sprinkle with Italian seasoning. Bring to a boil.
  4. Add broken lasagna noodles; simmer until al dente (approximately 10 minutes).
  5. Mix in ricotta cheese gently until well combined.
