  • 1 lb lean ground turkey
  • 1 can (14.5 oz) no-salt-added diced tomatoes
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Halve the spaghetti squash lengthwise and remove seeds. Drizzle cut sides with olive oil, then season with salt and pepper.
  2. Place squash cut-side down on a parchment-lined baking sheet and roast for 30-40 minutes until tender.
  3. In a skillet over medium heat, add olive oil. Sauté onion and garlic until fragrant. Add ground turkey; cook until browned.
  4. Stir in diced tomatoes and Italian seasoning; simmer for 15 minutes, stirring occasionally.
  5. Flip roasted squash cut-side up and scrape out strands with a fork.
  6. Combine spaghetti squash strands with turkey marinara sauce; serve topped with grated Parmesan.
