  • 1 lb ground lamb
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint, finely chopped
  • 1 small onion, grated (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 cups mixed vegetables (bell peppers, zucchini), chopped
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, combine ground lamb with parsley, mint, onion, garlic, spices, salt, and pepper until just mixed.
  3. Using wet hands, form the mixture into small oval-shaped koftas.
  4. Toss vegetables in olive oil with salt and pepper; spread on one side of the baking sheet.
  5. Place the koftas on the other side of the sheet and bake for 20-25 minutes until golden brown and cooked through.
  6. Serve hot with yogurt sauce or tahini.
