  • 1 lb lean ground beef (80/20)
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 1 cup cranberry sauce (homemade or canned)
  • 1 lb fresh green beans, trimmed
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, mix ground beef, breadcrumbs, eggs, chopped onion, garlic powder, salt, and pepper until just combined.
  3. Shape the mixture into a loaf on the prepared baking sheet.
  4. Spread half of the cranberry sauce over the top of the meatloaf; reserve the rest for later.
  5. Arrange green beans around the meatloaf; drizzle with olive oil and season with salt and pepper.
  6. Bake for 45-50 minutes until the meatloaf reaches an internal temperature of 160°F (70°C). Optionally add more cranberry sauce in the last five minutes of baking.
  7. Let rest for 10 minutes before slicing and serve with remaining glaze drizzled on top.
