  • 2 lbs russet or Yukon Gold potatoes, peeled and chopped
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream (or milk)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, minced garlic, chopped onion, and egg. Season with salt and pepper. Mix until just combined.
  2. Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Heat oil in a skillet over medium heat; brown meatballs on all sides for about five minutes.
  4. Remove meatballs; in the same skillet, add beef broth and soy sauce; bring to a simmer.
  5. Return meatballs to the skillet; cook on low heat for an additional ten minutes until cooked through.
  6. Boil peeled potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and heavy cream until smooth.
