  • 2 medium Granny Smith apples, cored and sliced
  • 2 cups butternut squash, peeled and cubed
  • 2 tbsp extra-virgin olive oil
  • 1 medium onion, thinly sliced
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss butternut squash and apple slices with olive oil, salt, pepper, and thyme until evenly coated.
  3. Heat a skillet over medium-high heat; sear pork chops for 3-4 minutes per side until golden brown.
