  • 2 cups bok choy, chopped
  • 2 tablespoons white or yellow miso paste
  • 2 tablespoons unsalted butter, softened
  • 1 clove garlic, minced
  • 1 tablespoon low-sodium soy sauce
  • Salt and pepper to taste
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Prepare ingredients: Rinse and chop bok choy; mince garlic.
  2. Make miso butter: In a bowl, mix miso paste, butter, minced garlic, and soy sauce until smooth.
  3. Sear the cod: Heat oil in a skillet over medium-high heat. Season cod with salt and pepper; place skin-side down in the hot skillet.
  4. Cook until golden: Sear for about 4 minutes without moving; flip and cook for an additional 3 minutes or until flaky.
  5. Add bok choy: During the last two minutes of cooking, toss in chopped bok choy and stir until wilted.
