  • 1/4 cup pure maple syrup
  • 2 tsp chipotle powder
  • 2 medium sweet potatoes, peeled and cubed (about 2 cups)
  • 8 oz fresh green beans, trimmed
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato cubes in olive oil, salt, and pepper; spread them on one side of the prepared baking sheet.
  3. In a small bowl, mix maple syrup, chipotle powder, salt, and pepper to create the glaze.
  4. Roast the sweet potatoes for 15-20 minutes until slightly tender.
  5. Push sweet potatoes aside on the baking sheet and place the salmon fillets on the other side. Brush generously with the maple-chipotle sauce.
  6. Return to the oven for another 12-15 minutes until salmon flakes easily and sweet potatoes are fully tender.
