  • Salt and pepper to taste
  • 12 oz bouncy pappardelle pasta

Instructions

  1. Sear the short ribs: Set the Instant Pot to sauté mode. Add olive oil and sear short ribs on all sides until browned (about 3 minutes per side).
  2. Sauté aromatics: Remove short ribs. Add onions and garlic; sauté until fragrant (about 2 minutes). Stir in carrots.
  3. Deglaze: Pour in red wine while scraping any bits from the pot's bottom. Simmer for 2 minutes.
  4. Build sauce: Stir in tomato paste and balsamic vinegar. Return short ribs to the pot; season with salt and pepper.
  5. Pressure cook: Close lid and set on high pressure for 45 minutes.
  6. Cook pappardelle: Boil salted water and cook pappardelle according to package directions until al dente (about 5 minutes).
  7. Serve: Release steam from Instant Pot, shred short ribs with forks, and mix with pasta before serving.
