  • 34 pounds boneless beef roast (ribeye or sirloin)
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup fresh parsley, chopped
  • 6 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix garlic, herbs, olive oil, salt, pepper, and lemon juice until combined.
  3. Rub the herb mixture all over the beef roast.
  4. Heat olive oil in a skillet; sear the roast on all sides for about 3-4 minutes until browned.
  5. Transfer the roast to a baking dish and roast in the oven for about 1 hour or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
