  • 1 kg bone-in mutton
  • 2 medium starchy potatoes, diced
  • 2 large onions, finely chopped
  • 2 medium tomatoes, chopped
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tbsp coriander powder
  • 1 tsp red chili powder (adjust to taste)
  • Fresh cilantro for garnish

Instructions

  1. Wash the mutton under cold water and dice the potatoes into two-inch chunks.
  2. Heat oil in a large pot over medium heat. Sauté the onions until golden brown (about 5 minutes).
  3. Stir in ginger-garlic paste and sauté for another minute until fragrant.
  4. Add cumin seeds, coriander powder, and red chili powder; mix well.
  5. Incorporate mutton pieces and chopped tomatoes; cook uncovered for 5 minutes until juices release from the meat.
  6. Add enough water to cover the mutton (about 3 cups) and bring to a boil. Reduce heat to low, cover, and simmer for about an hour. Add potato chunks halfway through cooking.
  7. Check seasoning before serving. Garnish with fresh cilantro and serve with naan or rice.
