  • 2 medium zucchinis (sliced into ribbons)
  • 1 cup cherry tomatoes (halved)
  • 1 small red onion (thinly sliced)
  • ½ cup fresh basil leaves (torn)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Wash zucchinis and slice them into thin ribbons using a vegetable peeler or mandoline.
  2. Halve cherry tomatoes and place them in a large bowl.
  3. Thinly slice red onion and add to the bowl (soak in cold water for 10 minutes if desired).
