  • 4 cups seedless watermelon, cubed
  • 2 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped

  • Juice of 1 lime (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the watermelon, tomatoes, cucumber, red bell pepper, and red onion into manageable pieces.
  2. In a blender, combine the chopped ingredients with basil (or mint), lime juice, and olive oil. Blend until smooth but slightly chunky for texture.
  3. Transfer the mixture to a bowl or airtight container. Cover and chill in the refrigerator for at least one hour to allow flavors to meld.
  4. After chilling, taste and adjust seasoning with salt and pepper. Add more lime juice if desired.
