  • 1 French baguette
  • 2 ripe heirloom tomatoes (250g)
  • 2 ripe nectarines (300g)
  • ¼ cup fresh basil leaves, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette diagonally into half-inch pieces and arrange on a baking sheet. Brush one side with olive oil.
  2. Toast the bread slices for 5-7 minutes until golden brown.
  3. While the bread is toasting, dice tomatoes and nectarines into small chunks.
  4. In a bowl, combine diced tomatoes, nectarines, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Toss gently.
  5. Once the bread is toasted, spoon the fruit mixture onto each slice.
  6. Serve on a platter with an optional drizzle of additional olive oil or balsamic glaze.
