  • 1 cup cooked green or brown lentils
  • 1 cup fresh flat-leaf parsley, finely chopped
  • 1 cup cherry tomatoes, diced
  • ½ cucumber, peeled and diced
  • ½ red onion, finely chopped
  • 5 tablespoons extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse 1 cup of lentils and boil in 3 cups of water for 20-25 minutes until tender. Drain excess water.
  2. Dice cherry tomatoes, cucumber, and red onion. Finely chop parsley.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  4. In a large bowl, mix cooked lentils with chopped veggies and pour dressing over. Toss gently to combine.
  5. Let sit for 10 minutes at room temperature or refrigerate for an hour before serving.
  6. Transfer to a serving bowl and drizzle with any remaining dressing if desired.
