  • 1 ripe avocado, diced (about 150g)
  • 1 cup cherry tomatoes, halved (about 150g)
  • 1/4 cup red onion, thinly sliced (about 40g)
  • 1/4 cup fresh cilantro, chopped (about 15g)
  • Juice of 1 lime (about 30ml)
  • Salt and pepper to taste

Instructions

  1. Wash all vegetables and slice cucumbers into thin rounds.
  2. Halve cherry tomatoes and finely dice red onion.
  3. Cut the avocado in half, remove the pit, scoop it into a mixing bowl, and mash slightly while leaving some chunks for texture.
  4. Add the chopped cucumbers, halved cherry tomatoes, diced red onion, and chopped cilantro to the bowl with avocado. Gently fold together.
  5. Squeeze lime juice over the mixture to enhance flavors and prevent browning of avocados.
