Ingredients

  • 4 ripe tomatoes (600g), diced
  • 1 cucumber (200g), peeled and diced
  • 1 red bell pepper (150g), diced
  • 1/2 red onion (75g), diced
  • 2 cloves garlic, minced
  • 3 tbsp olive oil (45ml)
  • 2 tbsp red wine vinegar (30ml)
  • Salt and pepper to taste

Instructions

  1. Wash all vegetables thoroughly.
  2. Dice the tomatoes, cucumber, red bell pepper, and red onion into rough pieces.
  3. In a blender, combine all chopped vegetables with garlic, olive oil, and red wine vinegar. Season with salt and pepper.
  4. Blend until smooth but slightly chunky.
  5. Transfer to an airtight container and chill in the fridge for at least two hours.
  6. Taste and adjust seasoning if needed before serving in bowls or glasses.
