  • 4 bone-in chicken thighs (1.5 lbs)
  • 1 cup dry red wine
  • 4 slices thick-cut bacon
  • 8 oz fresh cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Pat chicken thighs dry and season with salt and pepper.
  2. In a large skillet, cook bacon over medium heat until crispy. Remove bacon but keep drippings in the pan.
  3. Sear chicken thighs skin-side down in the bacon fat for about 5-7 minutes until golden brown, then flip and cook for an additional few minutes before removing from the skillet.
  4. In the same skillet, sauté onions and mushrooms for about 5 minutes until soft. Add garlic and cook until fragrant.
  5. Pour in red wine and chicken broth; stir in thyme and bay leaves. Return chicken to the skillet skin-side up.
  6. Cover with foil or lid and bake for about 40 minutes, removing cover during the last 10 minutes for extra crispiness.
  7. Let rest for 5 minutes before serving, drizzling sauce over chicken.
