  • 2 racks baby back ribs (approximately 3 pounds)
  • 1 cup BBQ sauce (store-bought or homemade)
  • 2 tablespoons paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup hickory or applewood chips (soaked in water)

Instructions

  1. Prepare the ribs by removing the membrane from the back for better flavor absorption.
  2. Mix paprika, brown sugar, garlic powder, onion powder, salt, and pepper to create the dry rub. Generously coat both sides of the ribs and let sit for at least one hour, preferably overnight.
  3. Preheat your smoker to 225°F (107°C). While it heats up, soak the wood chips for about 30 minutes.
  4. Place seasoned ribs on grill grates bone side down and smoke for approximately 3 hours.
  5. After three hours, baste both sides of the ribs with BBQ sauce and continue smoking for another hour.
  6. Ensure ribs reach an internal temperature of around 195°F (90°C). Let rest for ten minutes before slicing and serving with extra sauce.
