  • 1 lb pizza dough (store-bought or homemade)
  • 1 cup fresh or frozen sweet corn (thawed if frozen)
  • 1/2 cup Cotija cheese (crumbled)
  • 1/4 cup mayonnaise
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat your oven to 475°F (245°C) with a pizza stone inside if using.
  2. Roll out the pizza dough on a floured surface to your desired thickness and place it on a baking sheet lined with parchment paper or onto the hot pizza stone.
  3. In a bowl, mix mayonnaise, lime juice, chili powder, and half of the Cotija cheese until well combined.
  4. Spread the mixture evenly over the rolled-out dough and top generously with corn.
  5. Bake for 12-15 minutes or until the crust is golden brown.
  6. Remove from oven and sprinkle remaining Cotija cheese and cilantro on top before slicing.
