  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 garlic cloves
  • 1 tsp ground cumin
  • 1/2 cup all-purpose flour (or chickpea flour for gluten-free)
  • 1 tsp baking powder
  • Salt & pepper to taste

Instructions

  1. Prepare the chickpeas by draining and rinsing them under cold water. Pat dry.
  2. In a food processor, combine chickpeas, parsley, cilantro, garlic, cumin, salt, pepper, baking powder, and flour. Pulse until mixed but slightly chunky.
  3. Preheat your waffle maker according to its instructions.
  4. Lightly spray the waffle maker with nonstick cooking spray if desired.
  5. Scoop about half a cup of the mixture into the preheated waffle maker and cook for 5-7 minutes until golden brown and crispy.
  6. Carefully remove the waffles using tongs and serve immediately with tahini sauce or yogurt-based dips.
