  • 2 large eggs
  • 1 cup shredded carrots
  • 3 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 2 tbsp vegetable oil
  • Optional: crushed peanuts and lime wedges for garnish

Instructions

  1. Soak rice noodles in warm water for 30 minutes until softened. Drain and set aside.
  2. Heat vegetable oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 5 minutes.
  3. Push turkey to one side of the skillet, crack in eggs, and scramble until cooked through. Mix with turkey.
  4. Stir in shredded carrots and any additional vegetables (like snap peas or bell peppers). Sauté for another 3 minutes.
  5. In a small bowl, whisk together tamarind paste, soy sauce, brown sugar, and lime juice. Pour sauce into skillet, combining all ingredients well.
