Tomato Lasagna is a heartwarming dish that combines layers of ripe tomatoes, creamy ricotta, and gooey mozzarella into a comforting meal that’s perfect for family dinners or gatherings.   • 9 lasagna noodles (traditional or no-boil)
  • 4 cups fresh ripe tomatoes, chopped
  • 15 oz ricotta cheese
  • 2 cups shredded whole milk mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add chopped tomatoes and half of the basil. Simmer for about 10 minutes until slightly thickened.
  3. In a bowl, mix ricotta cheese with salt, pepper, and half of the mozzarella until smooth.
  4. Layer the bottom of the baking dish with tomato sauce; add noodles, ricotta mixture, and more sauce. Repeat layers until all ingredients are used, finishing with noodles topped with remaining sauce and mozzarella.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  6. Let cool for 10 minutes before slicing and garnish with remaining basil.
