  • 1 whole turkey (1214 pounds)
  • 1 cup fresh chestnuts, chopped
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 3 cups stale bread crumbs
  • 2 tbsp fresh thyme, minced
  • 2 tbsp fresh sage, minced
  • 1 cup low-sodium chicken broth
  • 4 tbsp butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a skillet over medium heat, melt butter. Sauté onions and celery until soft (about 5 minutes). Stir in chestnuts, thyme, and sage.
  3. Mix in bread crumbs and gradually add enough chicken broth until moist but not soggy.
  4. Stuff the turkey cavity loosely with the mixture and secure it with kitchen twine.
  5. Place the turkey breast-side up on a roasting rack in a pan. Brush with melted butter and season with salt and pepper.
  6. Roast for approximately 13-15 minutes per pound or until an internal temperature of 165°F (74°C) is reached.
  7. Let rest for at least 20 minutes before carving.
