  • 3 large bell peppers (red, yellow, or green), diced
  • 1 lb lean ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cups shredded cheese (mozzarella or cheddar)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare a large baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent (about 5 minutes).
  3. Add ground meat; cook until browned (7-10 minutes). Drain excess fat.
  4. In a bowl, mix cooked meat with rice, diced tomatoes, spices, and diced bell peppers until well combined.
  5. Layer half the mixture in the baking dish; sprinkle with half of the cheese. Top with remaining mixture and cheese.
  6. Cover with foil and bake for 30 minutes; remove foil in the last 5 minutes for a golden top.
