  • 8 large Portobello mushrooms
  • 2 cups fresh baby spinach
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms with a damp cloth and remove the stems.
  3. In a skillet, heat olive oil over medium heat. Sauté garlic for 1 minute, then add spinach until wilted. Remove from heat.
  4. In a bowl, mix cream cheese, sautéed spinach and garlic, mozzarella, Parmesan, salt, and pepper until combined.
  5. Generously fill each mushroom cap with the mixture.
  6. Bake on a lined baking sheet for about 20 minutes until golden brown.
