  • 2 medium acorn squashes
  • 1 lb ground turkey or beef
  • 1 cup cooked quinoa
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cut each acorn squash in half lengthwise, scoop out seeds, drizzle with olive oil, season with salt and pepper, and place cut-side down in the baking dish. Roast for 25-30 minutes until tender.
  3. In a skillet over medium heat, add olive oil, then sauté diced onion and minced garlic until softened. Add ground turkey or beef along with cumin and paprika; cook until browned.
  4. Stir in cooked quinoa and cheddar cheese until combined.
  5. Flip roasted squash cut-side up, fill generously with the stuffing mixture, return to the oven for another 10 minutes.
  6. Serve warm, optionally drizzled with balsamic reduction or topped with fresh herbs.
