  • 1 cup crushed cookies for topping

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press into a greased springform pan and bake for 10 minutes. Let cool.
  2. In a large bowl, beat cream cheese until smooth. Gradually add remaining sugar while mixing. Fold in sour cream and vanilla until combined.
  3. Pour cheesecake mixture over the cooled crust and smooth the top.
  4. Bake for 50-60 minutes until slightly jiggly but set around the edges. Cool in the oven with the door ajar.
  5. Chill in the refrigerator for at least four hours or overnight.
  6. Before serving, top with sliced strawberries and crushed cookies.
