  • 3/4 cup dark brown sugar
  • 1 cup all-purpose flour (sifted)
  • 1 tsp baking powder
  • 2 large eggs (room temperature)
  • 1/2 cup heavy cream
  • 3/4 cup dark brown sugar (for sauce)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. Soak chopped dates in boiling water for 10 minutes, then drain.
  3. In a mixing bowl, cream together butter and dark brown sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Fold in flour and baking powder until just combined, then stir in soaked dates.
  5. Pour batter into the prepared baking dish and bake for 30-35 minutes or until a skewer comes out clean.
  6. For the sauce, combine heavy cream, additional brown sugar, and vanilla extract in a saucepan over medium heat until bubbling.
