  • 2 cups fresh spinach (chopped)
  • 4 garlic cloves (minced)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Sauté chopped spinach in a skillet over medium heat for about 3 minutes until wilted, then let cool.
  3. In a large bowl, combine ground beef, sautéed spinach, minced garlic, breadcrumbs, eggs, mozzarella, Parmesan cheese, and Italian seasoning. Mix until well combined.
  4. Form the mixture into meatballs (about 2 tablespoons each), pressing your thumb into the center to stuff with more mozzarella before sealing.
  5. Place the stuffed meatballs on the baking dish and bake for 25-30 minutes or until golden brown and cooked through.
