  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 4 cups low-sodium vegetable broth
  • 2 tbsp toasted sesame oil
  • 1 tsp chili flakes (adjust to taste)
  • Salt to taste

Instructions

  1. In a large pot over medium heat, drizzle sesame oil and sauté onions until translucent (about 5 minutes). Add garlic and ginger; sauté until fragrant.
  2. Stir in chopped carrots and cook for another 3 minutes.
  3. Add rinsed lentils and vegetable broth; bring to a gentle boil. Reduce heat and simmer uncovered for 15-20 minutes or until lentils are tender.
  4. Blend the soup until smooth using an immersion blender or regular blender (blend just half for a chunkier texture).
