  • 2 medium eggplants (about 700g)
  • 4 tbsp white miso paste
  • 3 cloves garlic, minced
  • 12 tbsp chili paste (adjust to taste)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 green onions, thinly sliced (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the eggplants into rounds about half an inch thick. Sprinkle lightly with salt and let sit for 10 minutes to draw out moisture.
  3. In a bowl, mix miso paste, minced garlic, chili paste, soy sauce, and sesame oil until smooth.
  4. Rinse the salted eggplant slices and pat them dry with paper towels. Toss in the miso sauce until well coated.
  5. Arrange the eggplant on the baking sheet in a single layer and bake for 25-30 minutes until golden brown.
  6. Serve hot, drizzled with any remaining sauce and topped with sliced green onions.
