  • 6 tablespoons unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 23 tablespoons ice water

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, toss sliced pears with grated ginger and brown sugar; let sit for 10 minutes.
  3. In another bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add ice water to form dough; chill for 30 minutes.
  4. Roll out dough on a floured surface into a 12-inch circle. Place on parchment-lined baking sheet.
  5. Pour pear mixture into the center of the dough, leaving a 2-inch border.
  6. Fold edges over filling, pleating as necessary. Bake for 35 minutes or until golden brown.
