Ingredients

Scale
  • 2 cups cooked spaghetti
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 slices thick sourdough bread
  • 2 tablespoons unsalted butter
  • 1/2 cup marinara sauce (optional)

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a large bowl, mix the cooked spaghetti with marinara sauce until well-coated.
  3. Butter one side of each slice of bread. On the unbuttered side of one slice, layer half the cheese blend followed by the spaghetti mixture, then top with remaining cheese and close with another slice (buttered side facing out).
  4. Heat a skillet over medium heat and grill the sandwich for about 3-4 minutes per side until golden brown and crispy.
  5. Remove from heat, let cool slightly, then cut in half and serve warm.
