  • 100g freshly grated Parmesan cheese

  • Salt (for pasta water)

  2. In a skillet over medium heat, sauté diced pancetta until crispy (about 5 minutes).

  4. Reserve some pasta water, then drain the spaghetti. Combine with pancetta off the heat.
  5. Quickly stir in the egg-and-cheese mixture, adding reserved pasta water for desired creaminess.
