  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 2 Hershey's chocolate bars (6 oz total), melted
  • 3/4 cup graham cracker crumbs
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and sugar until combined.
  3. In another bowl, mix the eggs, milk, and vegetable oil. Melt the Hershey's chocolate bars in the microwave until smooth.
  4. Combine the wet ingredients with the dry ingredients until just mixed. Gently fold in the melted chocolate.
  5. Fill cupcake liners halfway with batter and sprinkle graham cracker crumbs on top.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. After slightly cooling, top each cupcake with mini marshmallows and broil briefly until golden brown.
