  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 2 medium sweet onions, sliced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the chuck roast with salt and pepper. In a skillet over medium-high heat, sear the roast until browned on all sides.
  2. Chop the carrots, potatoes, and onions into uniform pieces.
  3. Place carrots at the bottom of the slow cooker. Layer with potatoes and onions, then add the seared roast on top.
  4. In a bowl, mix together beef broth, Worcestershire sauce, garlic, thyme, salt, and pepper. Pour over the roast and veggies.
  5. Cover and cook on low for 8 hours or high for 4 hours until tender.
  6. Let the roast rest for 10 minutes before slicing against the grain.
