  • 1.5 pounds beef sirloin, sliced into strips
  • 2 bell peppers (1 red, 1 green), chopped
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • ¼ cup soy sauce (low-sodium optional)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cornstarch mixed with 2 tablespoons water

Instructions

  1. Slice beef sirloin into thin strips against the grain.
  2. In a skillet over medium heat, sauté beef strips until browned; they don’t need to be fully cooked.
  3. Transfer the beef to a slow cooker and add chopped bell peppers and onion.
  4. In a bowl, whisk together beef broth, soy sauce, Worcestershire sauce, garlic, salt, and pepper; pour over the meat and veggies.
  5. Cook on low for 6 hours or high for 3 hours.
  6. About 15 minutes before serving, stir in the cornstarch mixture to thicken the sauce.
