  • 34 lbs chuck roast
  • 1 packet (1 oz) ranch dressing mix
  • 1 packet (1 oz) au jus gravy mix
  • 68 pepperoncini peppers, with juice
  • 1 cup beef broth
  • 2 tbsp butter

Instructions

  1. Pat the chuck roast dry and season it generously with salt and pepper.
  2. In a skillet, melt butter over medium-high heat. Sear the roast on both sides for about three minutes until golden brown.
  3. Transfer the seared roast to the slow cooker. Sprinkle ranch dressing and au jus mixes on top. Add pepperoncini peppers and their juice.
  4. Pour beef broth around the roast.
  5. Cover and cook on low for 8 hours or high for 4 hours until tender.
  6. Shred meat with forks in the slow cooker before serving.
