  • 4 lbs beef short ribs
  • 2 large carrots, chopped into thick coins
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 lbs parsnips, peeled and chopped
  • 4 tbsp unsalted butter
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Sear short ribs in a hot skillet until browned on all sides; season with salt and pepper.
  2. Sauté onion and garlic in the same skillet until softened; add carrots and cook for another minute.
  3. Pour beef broth into the skillet to deglaze, scraping any browned bits, then transfer to a slow cooker.
  4. Place seared short ribs on top of vegetables in the slow cooker and cover. Cook on low for 8 hours or high for 4 hours.
  5. Boil parsnips in salted water until tender (about 15 minutes), then drain. Blend parsnips with butter and cream until smooth; season to taste.
  6. Serve short ribs over parsnip puree, drizzling with braising liquid.
