  • 2 (15 oz) cans chickpeas, rinsed and drained
  • 2 medium carrots, chopped
  • 1 medium sweet potato, peeled and diced
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1 tsp sweet paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Chop carrots, sweet potatoes, and red onion into uniform pieces for even cooking.
  3. In a bowl, combine drained chickpeas with 1 tablespoon of olive oil and half of the spice mix (cumin, cinnamon, paprika, salt, and pepper). Toss until well-coated.
  4. Spread seasoned chickpeas on one side of the baking sheet. In another bowl, drizzle the chopped vegetables with the remaining olive oil and spices before placing them on the other side of the sheet.
  5. Roast in preheated oven for 25-30 minutes or until golden brown; stir halfway through cooking.
  6. Once ready, let cool slightly before serving. Optionally drizzle with more olive oil or lemon juice.
