  • 1.5 lbs pork tenderloin
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 medium carrots, chopped
  • 2 medium parsnips, chopped
  • 1 large red onion, cut into wedges
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tsp fresh rosemary or thyme, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a large sheet pan with nonstick cooking spray.
  2. Pat the pork tenderloin dry and season generously with salt and pepper.
  3. Whisk together maple syrup and Dijon mustard in a bowl. Brush half over the pork.
  4. Toss carrots, parsnips, and red onion in olive oil, salt, pepper, and herbs; spread them on one side of the pan.
  5. Place the glazed pork on the other side of the pan and drizzle remaining sauce over vegetables.
  6. Roast for 25-30 minutes until pork reaches an internal temperature of at least 145°F (63°C). Let rest for 5 minutes before slicing.
