  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup apricot jam
  • 1 cup baby carrots
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine ground meat, breadcrumbs, parsley, garlic powder, salt, and pepper. Mix until just combined.
  3. Shape mixture into golf ball-sized meatballs (16-20 total).
  4. In another bowl, whisk together apricot jam and soy sauce.
  5. Arrange meatballs on one side of the baking sheet; toss carrots with olive oil, salt, and pepper on the other side.
  6. Brush meatballs with half of the apricot glaze and bake for about 20 minutes until cooked through (internal temperature of 165°F/74°C). Brush with more glaze halfway through.
