  • 1 lb beef flank steak, sliced thinly against the grain
  • 1 tbsp fresh ginger, minced
  • 3 garlic cloves, minced
  • 1 cup bell peppers (mixed red and green), chopped
  • 1 cup carrots, thinly sliced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Slice the beef flank steak into thin strips against the grain. Chop bell peppers and slice carrots into bite-sized pieces. Mince the ginger and garlic.
  2. In a bowl, whisk together soy sauce, sesame oil, minced ginger, minced garlic, and cornstarch mixture until well combined.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add beef strips and cook until browned on all sides (about 3-4 minutes). Remove from pan and set aside.
  4. In the same skillet, add more oil if needed and sauté bell peppers and carrots until tender-crisp (about 5-7 minutes).
  5. Return beef to the pan, pour in the sauce, and stir until everything is well coated. Simmer for a few minutes to meld flavors.
  6. Serve hot over rice or noodles; garnish with sesame seeds if desired.
