  • 1 cup cooked shrimp (peeled)
  • 1 cup calamari rings
  • 1 cup lump crab meat
  • 1 medium cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 medium red onion (thinly sliced)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the shrimp: Boil salted water, add shrimp for 3 minutes until pink, then add calamari for another minute. Drain and cool.
  2. Prep the veggies: Dice cucumber, halve tomatoes, and slice red onion. Combine in a large bowl.
